Detail is important! Make sure there are no large flat surfaced on your ship. Not only will the extra layers protect you more, they will make your ships look more interesting.
Interiors are important! We build role-playing ships, not disguised battlecubes!
Experiment with your ships, use external generators, use gravity lifts. They add to the role-playing value.

Want to make fitted turrets? Turn docking validation off! that way you can create embedded turrets!

only problem then is if people decide to use your ship on a server without that setting then each time the turrets will undock

an alternative way is to use fitting plates, but these are bulky and dont look as nice.

use brown hull as pipes. makes a great asset to hanger bays
